uh, what do I do with this?

In the interest of trying to eat more real food, as opposed to processed food, Sam and I signed up for a vegetable share from a local organic farm.  We’re splitting it with two other people, so it’s not like we have a huge box of vegetables to deal with, but still.

We’ve had it two weeks now, and already I’ve been stymied by what to do with some things.  Like, beets for instance. I don’t really like beets, and I took some the other day.  I tried to cook with them, and the whole dish ended up tasting like beets, which made me just not want them.  And luckily, the organic place sent along a handy book with pictures so I could figure out what kohlrabi was (and what to do with it).

And really, there are only so many leafy greens you can eat.

    Beets:
    Peal the beets and cut them up in crescents about 1/4 inch thick. Put them in a bowl. Toss them with enough oil (1 or 2 Tbls)to cover each crescent evenly. Spread them out on a cookie sheet. Bake at 350F until tender. Sprinkle some freshly squeezed orange juice on them before you serve. YUMMY!

    PS: spuds taste good this way too–just forget the orange juice!

    I used to send Neil to day care with diced beets. He loved them, and would come home with his hands all red! I’m sure the day care people didn’t like them as much as he did! I think you probably fed him some too! Don’t know where he got his taste for them, as I don’t much care for them myself. But I might try Theresa’s recipe!

    I love beets give them to me they are great on sandwiches or boil them add vinegar and onion and sugar I made some at the lake …to me it means summer
