sausage

I’m already thinking of how to have my deer processed this year.  The boys (brothers and dad) usually get me a whole deer, and I pay for the processing. They usually give me the small one, and I can barely eat the whole thing each year. Some of my friends rebel and say they’ll come for dinner as long as I serve something like chicken.  This year it will likely be better since I’m seeing Sam again, he never minded eating it every once in a while.

However, this year I told my dad that I’d like to have some deer sausage made out of it.  Apparently you just tell the processing guys how much you want made into sausage, and they’ll cut the meat differently, like  more stew meat or something.  Then you can just bring the  meat into a sausage-making place and they’ll make it into sausage for you. Now I just need to find a place around here that will accept foreign meat with which to make sausage.

And, Sam’s brother got him a book on making sausage last year, and he’s been itching to make some.  What better meat to try on than venison?  I don’t think I can trust it all to him though … we’ll how this year’s batch turns out.
